Let's try the strawberry shortcake - Jamaica Observer

No questions asked, it is here and it is ready. Summer backyard rave is on. Call the gang and have some fun. Summer is a big thing in the world, it's when people have real fun in the sun and are free from eating restrictions. You know perfectly well what I'm referring to. This week we have a super easy recipe for you to enjoy with your family and friends. For today's dessert we have strawberry shortcake. Save for your next cookout.

• 2 cups strawberry filling, if using canned filling

In a medium bowl, add sugar and lemon juice to sliced strawberries, if using the fresh ones. Reserve one cup fresh strawberries for layering bowl. Set aside.

4 cups heavy whipping cream (very cold)

• 1 capful of whipped cream vodka (optional)

• 1 2 lb pound cake or 7" round plain

• 3 cups cool whipped for layering on top of cake

1. In a bowl or stand-alone mixer, beat the cold, heavy cream until soft peaks form.

2. Add powdered sugar and vanilla extract and beat for another 1-2 minutes.

3. Split whipped cream into two bowls. In one bowl, add whipped cream vodka and mix well, optional.

4. In the other bowl, add strawberry vodka, and red food colouring and mix well.

5. Using a serrated knife, cut pound cake into cubes.

6. In a trifle bowl (or any glass container of choice) add a layer of pound cake.

7. Add sliced strawberries along the side of the trifle bowl.

8. Add sliced strawberries on top of whipped cream mixture or cool whip.

9. Top with more pound cake and then add the strawberry vodka-infused whipped cream.

10. Add another layer of strawberries and repeat until at the top.

11. Top with home-made whipped cream and decorate with whole strawberries along the top of the trifle bowl.

12. Refrigerate for a few hours and enjoy!

It promises to have them coming back for seconds and thirds, have a sweet, delicate summer, from my house to yours.
